Serves 4

  • 2 onions
  • Small swede thinly sliced
  • 4 medium potatoes sliced
  • 8 rashers of bacon chopped smoked or unsmoked as preferred
  • Vegetable Stock cube (optional)
  • Oil or butter for frying
  • 4 eggs
  • Salt & Pepper for seasoning
  • Boiling water
  • Fresh crusty bread to accompany

Method:
Melt the oil and fry the bacon in a deep frying pan until cooked but not brown.  Add the onion and swede and gently cook for two minutes to ensure coated.  Add the sliced potato and cover with boiling water (a stock cube can be added to the boiling water). Ensure all the ingredients are covered.  Stir and season to taste.
The amount of water will depend on the quantity of water that has drained from the bacon so be careful not to dilute too much. Cook on high until bubbling and then cover gently simmer until all the vegetables are cooked.  Stir occasionally.
Serve with a poached egg on top and some crusty bread. 
The dish will still have the appearance of being “raw” hence the name, but don’t be put off by this, it really is a lovely tasty and inexpensive meal.
